I'm sure everyone is like me, always looking for a salad that is good and easy for a compliment to a summer supper. Also great in the winter...This recipe is an oldie, but goodie, but always a favorite. Pair it with BBQ chicken, homemade oatmeal bread and iced tea, and you've got supper!1 box spaghetti (break in 1/3's)
1 8 oz. bottle of Kraft Sun-Dried Tomato dressing (the original recipe called for Italian dressing,
I prefer the Sun-Dried Tomato dressing)
1/4-1/2 jar Salad Supreme (you can find it in the seasoning isle of your grocery store)
1 small chopped onion (sweet vidalia) or scallions
1 green pepper
1 red (colored) pepper
1 can ripe olives (cut in half)
1 pkg. mushrooms
1 pkg. pepperoni (sliced & quartered)
1 pkg. summer sausage (optional) sliced thick and quartered
3-4 tomatoes - halved, scoop out seeds and then cut into chunks
5 or 6 pieces of string cheese or a brick of mozzarella cheese (cut into bite size pieces)
- Cook the spaghetti el dente. Rinse with cold water and then store in refrigerator until needed. Chop the green and red pepper into chunks, and halve the ripe olives. Slice the mushrooms. (Tip... I use an egg slicer to make them pretty uniform) then slice in half. Quarter the pepperoni and slice the summer sausage in thick slices and then quarter).
- Add all the ingredients in a bowl and pour the Kraft Sun-Dried Tomato dressing over everything. Mix well. Store in refrigerator for about an hour before serving.
- Add that BBQ chicken, or steak and you have a wonderful summery treat.

Summer Fruit Sampler & Dip...Yep, it's almost summer. Although it wasn't a bad winter, I think we're all ready for some summer heat. I love fresh fruit, especially summer fresh fruit. cantaloupe, watermelon, strawberries, peaches and many, many more. When you bite into a summer fruit it only enhances the summer experience...and don't forget fresh fruit with cheese, sausage and a good wine is always a crowd pleaser.
All Occasion Cookies...Decorating cookies to make a partyor event is always special. My watermelon cookies were quite a hit at a summer party last year. So easy to make. Use a round cookie cutter and then cut them in half and bake. Pipe on some green, pink and white frosting and add some mini chocolate chips and you have a fun cookie for a special party.
Roast Beef Rollups with BLT Dip...another great party idea. You don't even need a party. They are also great for a light supper in the summertime. The BLT Dip is a great compliment to the roast beef rollups with some either homemade taco chips made out of tortillas or store bought are great too.
Cute Baby Afghan...I've always loved gingham ever since I was a little girl. Making this afghan was so much fun. I did make it full size, but it would be adorable for that new little bundle of joy.
Apple Cranberry Butter...I love to can things in the fall. My Apple Cranberry Butter is really good. It's simple to make and you can enjoy it all winter long when the snow flies. It's oh so yummy!
Who Loves You Baby Back Ribs...One of my favorite rib technique from Alton Brown. He was the host of the show "Good Eats"...I never missed an episode. He not only makes the complex easy, he also explains why we do what we do with recipes. It's almost like a really fun science class. I've included his video on baby back ribs on the post.
Ahhh...Those Summer Breezes...This post is only a bunch of fun "adult beverages" for summer. I've tried each and every one of them. They are all good. I especially liked the Pink Lemonade Margarita. So refreshing for a summer party or you don't even have to have a party. Just make them up and enjoy anytime!
