Chinese BBQ Chicken Cakes...

How many recipes do we all have for chicken? I think I have a million... but this one looks really interesting.  If you love the taste of Chinese food, this one is a winner.  They would be great for that summertime supper with a nice salad or vegetable.  Or maybe placing them on the salad.  Add some rolls and you have a nice light summer supper.  I do apologize, I don't know what magazine this recipe appeared in.  If by chance you know where, maybe you could leave a comment and let me know.

Chinese BBQ Chicken Cakes

3 cups chopped cooked chicken
1 1/4 cups panko crumbs
1/2 cup minced red bell pepper
1/4 cup minced green onion
1/4 cup minced fresh mushrooms
3 T. hoisin sauce
2 T. teriyaki sauce
1 T. minced fresh ginger
2 cloves garlic, minced
2 large eggs, lightly beaten
3 T. vegetable oil
Wasabi Sauce (recipe follows)

In a large bowl, combine chicken, bread-crumbs, bell pepper, onion, mushrooms, hoisin, teriyaki sauce, ginger, and garlic. Add eggs, mixing until well combined. Shape mixture into 2 inch patties.

In a large skillet, heat oil over medium heat. Cook chicken patties, in batches if necessary, for 2 to 3 minutes per side. Remove from skillet, and drain on paper towels. Serve immediately with Wasabi Sauce.

Wasabi Sauce
(Makes 1 cup)
1 cup sour cream
2 tsp. wasabi powder
1 tsp. fresh lemon juice
1/2 tsp. soy sauce
In a small bowl, combine sour cream, wasabi powder, lemon juice, and soy sauce. Cover, and refrigerate.
